A very fresh and fruity salad that goes perfect with the fish.
Ingredients:
1 large peach, peeled and cut into 1/4 inch cubes
1 large mango, peeled and cut into 1/4 inch cubes
1 tbsp. onion, finely chopped
1 medium plum tomato, seeded and cut into 1/4 inch cubes
1 small chili pepper, seeded and minced
1/2 tbsp. fresh lime juice
1 tbsp. fresh orange juice
1/2 tsp. finely grated orange zest
1 tbsp. mined parsley
salt and pepper to taste
Directions:
1. Combine all ingredients in a bowl and cool for at least 1 hour.
