these pancakes sounded different and good .. they have ricotta cheese, buttermilk mangos and strawberries in them... and strawberry season is almost here for us.... the recipe is from the forida agricultrue council
Ingredients:
1 cup unbleached all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups low-fat buttermilk
1/2 cup low-fat ricotta cheese
3/4 teaspoon honey
3/4 teaspoon canola oil
1 teaspoon freshly grated orange zest
1/4 teaspoon vanilla extract
1 egg white, beaten
1/2 cup mango, diced
1/2 cup strawberries, diced
juice of one orange
Directions:
1. In a bowl, combine flour, baking powder, baking soda and salt. In another bowl, whisk buttermilk, ricotta, honey, oil, orange zest and vanilla. With wire whisk, fold wet ingredients into flour mixture until just blended. Using rubber spatula, gently fold egg white into batter until just blended. Fold the mango, strawberries, and orange juice into the batter until just blended. Spoon batter into heated skillet and cook pancakes on both sides until golden brown. Serve warm.
