Mango-Lime Rice

This rice is great with grilled chicken or fish! Excellent for a hot summer day!
Ingredients:
2 cups brown rice
4 cups water
1 tablespoon fresh lime juice
1/2 cup chopped fresh cilantro
1 mango, peeled, pitted, and cut into 1/2 inch cubes
Directions:
1. Bring the brown rice and water to a boil in a saucepan. Stir the lime juice into the rice, reduce the heat to medium-low, and cover; simmer until the rice is tender and the liquid has been absorbed, 45 to 50 minutes.
2. Stir the cilantro and mango into the cooked rice to serve.
