Mango In Cinnamon Syrup With Rum Cream

Nothing better than fruit and cream on a hot summer night
Ingredients:
1 cup water
1/2 cup sugar
1/2 cinnamon stick
3 mangoes, peeled and thickly sliced lengthwise
1 tsp vanilla
2/3 cup whipping cream
1/4 cup rum
mint sprigs to garnish
Directions:
1. Put water, half the sugar, and cinnamon stick in saucepan and bring to boil
2. Reduce heat to simmer, stirring occasionally until syrup thickens Add mango cook 5 minutes or until barely tender
3. Remove cinnamon stick and add vanilla
4. Cool, then chill
5. Whip cream and remaining sugar until soft peaks form
6. Fold in rum
7. Serve on plate with mango fanned and a dollop of cream
8. Garnish with mint
