Mango Cheese

Time does not include chilling. To make mango pulp, peel and cut mango before grating through a sieve.
Ingredients:
3/4 cup sugar
1/2 teaspoon fresh lime juice
1 cup mango pulp
Directions:
1. Combine sugar, lime juice, and mango pulp.
2. In a heavy-bottomed sauce pan, cook while stirring constantly until the mixture leaves the sides of the pan.
3. Take a bit of the cheese mixture and put in cold water. If finished, it should form a ball.
4. Grease a shallow pan with rum or butter.
5. Pour cheese mixture 1 thick.
6. When cooled, cut into cubes and toss in granulated sugar.
