2 1/2 cup(s) mangos diced
1 tablespoon(s) lemon juice
3 eggs
3/4 cup(s) vegetable oil
2 cup(s) flour
1 1/2 teaspoon(s) cinnamon
1 1/2 teaspoon(s) baking soda
1/2 teaspoon(s) salt
11/4 cup(s) sugar
Directions:

Marinate mango with lemon juice. Mix eggs and veg oil to the diced mango mixture. Snifters together dry ingredients. Stir mango mixture quickly and lightly into dry ingredients. Pour batter into 2 greased loaf pans.

Bake at 325 for 50 minutes.
