From Weight Watchers Cookbook - LOVE this salsa! Makes a great addition to tacos or goes well as a side dish to a BBQ served with rice. I never have leftovers!
Ingredients:
10 ounces black beans, rinsed and drained (1 can)
1 mango, diced
1 tomato, medium, seeded and diced
1/2 jalapeno pepper, seeded and finely diced
1/2 cup bell pepper, diced, red, yellow or orange
1/4 cup onion, diced
1/4 cup cilantro, chopped
2 tablespoons lime juice
1/8 teaspoon salt
Directions:
1. Rinse and drain beans and place in large bowl.
2. Chop, dice and/or slice next 6 ingredients and add to bowl.
3. Drizzle lime juice and salt over all and mix.
4. Chill until ready to serve.
