Mango Black Bean Salsa
Ingredients:
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can corn, whole kernel corn with bell peppers, drained
1 large tomato, seeded and diced
1 medium mango, peeled, seeded and diced
1/4 cup onion, chopped
1/4 cup fresh cilantro, coarsley chopped
1/4 cup olive oil
2 tablespoons fresh lime juice
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon ground cumin
Directions:
1. In a medium bowl, combine black beans, corn, tomato, mango, onion, cilantro, olive oil, lime juice, garlic powder, and salt.
2. Serve with baked tortilla or pita chips.
