I altered a recipe I found online for mango muffins. These are just to die for. For one of the ingredients you will have head to your local Indian store and ask for garam masala. I use the spice mix in so many things now.
Ingredients:
1 cup fresh mango, pureed
1 banana
1 large egg
1/4 cup vegetable oil
3/4 cup buttermilk
1 1/2 teaspoons baking powder
pinch of salt
3/4 cup sugar
1/2 teaspoon garam masala
1 1/2 cups flour
1 teaspoon vanilla extract
1/4 - 1/2 cup ground, dessicated coconut
Directions:
1. Preheat the oven to 375 degrees Fahrenheit. Grease the muffin tins.
2. In a bowl or food processor mash banana and mango together (depending on whether you have a fibrous mango or not).
3. In a small bowl whip together egg, oil, vanilla, and buttermilk.
4. Combine fruit with wet ingredients in the small bowl.
5. In a large bowl combine all the dry ingredients.
6. Pour wet ingredients into the dry and combine gently. Don't overmix.
7. Spoon into greased muffin tins.
8. Bake for 22 to 24 minutes (may need more if the mango was very liquidy)
9. Use a toothpick to check the center.
10. I do freeze these but they only last two weeks tops cuz you can't wait to eat them!!
