Mango And Lemon Cloud Jello Desserts

Jello desserts are not as popular today as it was when I was a little girl, but it's still one of my fav's.. Jello and Cream can be layered intermingle with tons of variations adding color and so many delectable flavors to suit any palate. Mango has a delicious, tropical flavor and if you want to make an old favorite with an exotic twist, what about making jello desserts with mango and lemon or these mango and lemon cloud jello desserts? The tart flavor of lemon contrasts perfectly with the extremely sweet mango flavor.
Ingredients:
6 oz gelatin
3 cups boiling water
8 oz thawed whipped topping
6 oz frozen lemonade
8 slices kiwi to garnish
4 red grapes, halved, to garnish
mint leaves and strawberry syrup to garnish
for the mango puree
1/2 mango
1 teaspoon lime juice
1 tablespoons sugar
Directions:
1. The Prep Time takes into consideration the chill time for the Jello, and this varies, because not all refrigerators are manufactured equally.
2. Stir together the gelatin and boiling water for 2 minutes then add the lemonade.
3. Refrigerate until thick and fold in the whipped topping.
4. Pour into eight small molds and chill.
5. Unmold the jello desserts.
6. Blend the mango puree ingredients together and paint this puree over the top of each jello.
7. Decorate the jello desserts with the kiwi and grape and decorate the serving plates with mint leaves and dots of strawberry syrup.

9. Mango puree is easy to make yourself and you can make organic mango puree by combining organic mango flesh with lime juice and sugar. Lemon juice can be used instead, if you like. Mango puree can be used to make jello recipes, cakes, or pies. This puree can also be used to make sauces for fish, chicken or other delicately flavored savory foods.
