Mandarin Spinach Salad

What makes this salad is the dressing which is a very simple vinaigrette made from items easily found in most pantries. It really compliments the salad ingredients.
Ingredients:
2 tablespoons vegetable oil
1 tablespoon rice vinegar
1 teaspoon grainy mustard
1 pinch salt
1 pinch ground black pepper
4 cups baby spinach leaves
1/2 cup bean sprouts
1/4 cup almonds, sliced (optional)
3 radishes, thinly sliced
1 green onion, sliced
1 (284 ml) can mandarin orange sections, drained and patted dry
Directions:
1. In a large bowl, whisk together the oil, vinegar, mustard, salt and pepper.
2. Add the spinach, bean sprouts, almonds (if using), radishes, green onion and oranges.
3. Toss to combine.
