I make this salad with every Holiday dinner. It is the perfect accompaniment to balance out all the other traditional side dishes that tend to be on the more rich and heavier end of the spectrum. Enjoy!
Ingredients:
1 bunch romaine lettuce
1 (8 ounce) can mandarin oranges (whole segments in light syrup)
1/2 of a red onion
1/2 cup mayonnaise
1/3 cup sugar
1/4 cup milk
2 tablespoons white vinegar
1 tablespoon poppy seed
Directions:
1. Cut or tear lettuce into bite size pieces. Thinly slice the red onion. Drain liquid from mandarin oranges and pat dry with a paper towel. Gently toss together in a large bowl.
2. Wisk together all dressing ingredients until sugar is dissolved and texture is smooth. Pour dressing (amount to taste) over salad and serve.
3. Note: Dressing can be made a day ahead and refrigerated.
