I invented this as a junior in college and it was the perfect meal after a long and difficult day of class!
Ingredients:
1 chicken breast, cut into 1 in. pieces
1/2 green bell pepper, sliced
2 tablespoons white onions (diced)
1 (3 ounce) can orange sections (preferably in water)
1/4 cup frozen corn
1 tablespoon sesame oil
2 1/2 tablespoons soy sauce
1 teaspoon ginger (ground)
1/2 teaspoon sugar
1 teaspoon honey
Directions:
1. Drain the can of orange segments, rinse.
2. Mix ginger, sugar, sesame oil and soy sauce, let heat gently in frying pan.
3. Add chicken pieces and chopped onion, saute over medium high heat till chicken is white.
4. Add corn and bell pepper, saute for three minutes.
5. Add drained and rinsed oranges, and then spoon honey over mixture.
6. Saute for ten minutes, raise heat to high if desired.
7. Check chicken pieces with a toothpick to see if ready, there should still be a fair amount of liquid in the pan. Serve with rice.
