Mandarin Orange Chicken

Not very authentic or traditional...just delicious.
Ingredients:
1/4 cup all-purpose flour
16 chicken tenders or 4 boneless chicken breasts, cut into strips
2 tablespoons olive oil
2 tablespoons butter
1/3 cup hoisin sauce
1/3 cup orange juice
1 pinch red pepper flakes
1 (11 ounce) can mandarin oranges, drained
1 tablespoon chopped green onion
1/4 cup chopped cashews
Directions:
1. Place flour in a small bowl.
2. Dredge chicken in the flour to lightly coat.
3. Heat olive oil and butter in a medium skillet over medium heat, and saute the chicken breasts until no longer pink and juices run clear.
4. Set aside, and keep warm.
5. Stir hoisin sauce, red pepper flakes and orange juice into the skillet, and scrape up the browned bits.
6. Let cook for a few minutes until sauce thickens slightly.
7. Return chicken, mandarin oranges, green onions, and cashews, to the skillet.
8. Continue cooking just until all ingredients are heated through.
9. Serve over hot rice.
