Another one of mom's great chicken salad recipes. This one is very nice and we have served it at baby/bridal showers, great as a sandwich, salad or on crackers. Enjoy
Ingredients:
15-1/2 ounce can pineapple chunks with juice in heavy syrup
1 tablespoon soy sauce
12-1/2 ounce can diced tomatoes drained
1/3 cup packed cilantro chopped
1/4 cup almonds slivered
3 tablespoons vegetable oil
3 tablespoons cider vinegar
4 cups shredded cabbage
2 cups cooked chicken
1/2 cup sliced green onions
1/8 cup toasted sesame seeds
Directions:
1. Drain pineapple reserving 1/4 cup syrup.
2. Combine reserved syrup, oil, vinegar and soy sauce then stir briskly with fork.
3. Toss cabbage with pineapple, tomatoes, chicken and cilantro in large bowl.
4. Add dressing as desired then toss gently.
5. Serve sprinled with almonds and sesame seeds.
