This is wonderful to use with left over chicken, canned chicken or for any quick meal. It is great for a picnic, potluck, or just a hot summer night. Increase the poultry to match your allance. This is based on 3 oz cooked per person.
Ingredients:
12 oz chicken breast, boneless, skinless,cooked
1 cup orange, mandarin, slices, drained
3/4 cup white grapes,seedless,halved
1/2 cup celery, chopped
1/3 cup yogurt, plain, nonfat
1/4 cup mayonnaise, low calorie
5 tsp splenda
1 1/2 tsp curry powder
Directions:
1. Chop meat into bite sized pieces. Chill if warm.
2. In a small mixing bowl combine oranges, grapes, celery and yogurt, mayonnaise,Splenda, curry powder. Mix with cooled chicken.
3. Cover and refrigerate at least 2 hours.
