A delightfully different chicken salad made with grapes, mandarin oranges and toasted almonds. Prep and cook time does not include the cooking of the chicken.
Ingredients:
3 cups cut up cooked chicken breasts
1 tablespoon minced onion
1/2 teaspoon salt
2 tablespoons lemon juice
1/2 cup thinly sliced celery
1 cup seedless grapes, halved
1/3 cup mayonnaise
1 (11 ounce) can mandarin oranges
1/2 cup toasted slivered almonds
Directions:
1. Combine chicken, onion, salt, lemon and celery and refrigerate for several hours.
2. At serving time, toss chicken carefully with grapes, oranges, almonds and mayonnaise.
