Mandarin Chicken Salad

This is a great lunch salad. Or you can leave out the chicken and serve at family dinner time as a side salad. To save yourself some time you can use frozen chicken tenders,just make sure to cook them first LOL. Or you can use a package of Maple Leaf already cooked chicken pieces. From TOH
Ingredients:
1/2 cup ranch salad dressing
1/4 cup orange marmalade
1 1/4 lbs chicken breasts, boneless skinless (cooked and sliced- about 3 cups)
1/4 small red onion, thinly sliced
1 (12 ounce) package mixed salad greens (about 4 cups)
1 (11 ounce) can mandarin oranges, drained
1/2 cup seasoned croutons
salt, to taste
black pepper, to taste
Directions:
1. in large bowl blend dressing and marmalade.
2. add chicken, red onion and salad greens, toss to coat, add salt and black pepper if desired.
3. gently fold in oranges and croutons.
4. serve.
