Manchego Cheese And Radish Salad

This is a light salad that is a different twist to an ordinary lettuce, tomato and crouton salad. It dresses the table nicely too.
Ingredients:
10 cups of mixes lettuce greens, such as bibb, oak leaf, frisée, baby spinach and red leaf
4 radishes, ends trimmed
3 ounces manchego cheese, shaved
2 tablespoons minced shallots
2 tablespoons sherry wine vinegar
1 teaspoon dijon mustard
coarse salt and freshly ground pepper to taste
1/4 cup + 2 tablespoons extra-virgin olive oil
Directions:
1. Wash and dry the lettuce greens thoroughly. Let air dry in a colander completely.
2. In a large bowl, put the dry lettuce.
3. Thinly slice the radishes and add to the lettuce.
4. Add the Manchego cheese shavings.
5. Cover with a damp paper towl and refrigerate.
6. In a small bowl, whisk the shallots, vinegar, mustard, salt and pepper.
7. Slowly add the olive oil and whisk well until combined. Refrigerate.
8. When you're ready to serve, toss the salad with the vinaigrette.
9. If desired, add some croutons on top.
