Mamma's Trini-Style Macaroni Pie

Delicious main course favoured for Sunday lunch in Trinidad and Tobago. Often served with Callalloo.
Ingredients:
500 g macaroni
1 lb cheddar cheese, cubed
3 eggs
1 cup evaporated milk, non-fat
1 tsp salt
1 tsp paprika
1 tbsp dried chives
1 red pepper, chopped, seeds removed
1 medium onion
2 garlic cloves, chopped
1 tbsp hot sauce (optional)
Directions:
1. Boil and strain macaroni
2. Blend cheese and all other ingredients to a thick liquid consistency
3. Spread macaroni evenly in a large casserole dish
4. Pour 3/4 of cheese mixture onto macaroni and stir in till evenly distributed throughout.
5. Pour balance of cheese mixture over macaroni to cover completely
6. Place in preheated oven and bake at 350 degrees C until top is golden and slightly burnt.
7. Test with a knife to ensure the casserole is cooked inside.
8. Cut into cubes and serve.
