Mamma Meshele's Thanksgiving Turkey

This recipe includes brining - a process I highly recommend taking the time to complete. You'll have a juicy, flavorful turkey every time!
Ingredients:
8 lbs organic turkeys
1 gallon of organic apple juice (with no added sugars)
1 tablespoon peppercorn
1 tablespoon allspice
1 tablespoon clove
1 tablespoon ginger
distilled water
ice
2 whole organic apples, chopped (any type)
1/2 cup chopped onion
2 cinnamon sticks
1 cup distilled water
1 teaspoon rosemary
1 teaspoon sage
1 teaspoon ginger
1 teaspoon nutmeg
1 teaspoon clove
1 teaspoon allspice
your favorite oil
roasting bag
Directions:
1. Combine the brine ingredients into a large stock pot, a clean 5 gallon bucket or maybe even a large ice chest. Whatever will hold your turkey and enough water to cover it. Pour in the apple juice, spices and some ice until there's enough to keep it chilled Add water to keep it totally submerged. Keep it in a cold dark place, like the fridge or a basement. Keep sealed over night. (or 6-8 hours).
2. In the morning remove turkey from brine water and drain into the sink. Stuff the center of your bird with the filling ingredients. Rub your bird down with sunflower oil, oilve oil or whatever you like to use. Place in a browning bag and cook according to package instructions. (About an hour and a half I believe).
