Malibu Coast Veggie Frittata Surfs Still Up

Healthy veggie frittata served on the sand overlooking the Malibu coastline. Very yummy with kale and cauliflower, cheese and some other good stuff for the body....can use egg whites now....great after a dip in the ocean with your wet suit. Read more ..surf's still up guys here in CA.
Ingredients:
olive oil
1/2 diced onion
1 tsp. minced garlic
1/2 large cauliflower diced
1/4 lb. kale
1 shredded carrots
1/2 diced red bell pepper
6 eggs or egg whites equivalent
1/2 c. shredded cheddar cheese
1/4 c. parmesan cheese
2 t. chopped parsley
2 t. chives for garnish

Directions:
1. Microwave or steam cauliflower till soft.
2. Fry onions till carmelized in olive oil; as the onions are browning, add in cauliflower, red pepper, kale, garlic and carrots.
3. In another bowl scramble eggs or just egg whites
4. Pour the egg mixture over vegetables in fry pan and cover fry pan and put on low heat.
5. Make sure the edges are sizzling then turn down the heat....let it cook....when it is set and top of egg is cooked, flip it upside down onto a plate carefully and then put the shredded cheddar cheese and Parmesan cheese on the top and put under the broiler till it melts....this step makes it great!!
6. You can sprinkle chives, parsley and paprika over the top of this for garnish. Serve with a great sour dough piping hot baguette and if you want to put some of the omlette in the bageuette and of couse it would't be complete without a latte...so grab your wet suit and surf's still up...
