Ran into this recipe in a Makers Mark cookbook my daughter gave me for Christmas. Mushrooms, Bourbon.. uhhh.. OK ! This is a first pass and will be upgraded as we make modifications. But it was delish as is.
Ingredients:
24 stuffer mushrooms
1 cup butter
2 small onions, chopped
3 garlic cloves, minced
1/2 cup parsley, minced
2 tbs flour
3/4 cup seasoned bread crumbs
1 cup sour cream
salt & pepper to taste
makers mark bourbon as needed
parmesan cheese, grated
Directions:
1. Clean the mushrooms and remove the stems. Chop the stems and reserve. See Photo
2. In a medium skillet melt the butter, add onion and garlic. Saute until tender and onions are translucent. Reserve.
3. In a medium bowl combine the butter mix, chopped parsley, flour and breadcrumbs.
4. Add sour cream and salt and pepper. Blend all together well.
5. Arrange mushroom caps in a shallow baking dish. Drizzle a small amount of bourbon in each cap and then fill with the stuffing mix.
6. Sprinkle the top of each mushroom with the grated parmesan cheese. See Photo
7. Add just enough Makers Mark to cover the bottom of the baking dish.
8. Preheat oven to 375 degrees. Bake mushrooms for 20 minutes.
9. Serve hot.
