Make It Yourself--baked Beans In The Slow Cooker

Instead of beans from a can, just make your own...it takes a bit of planning to do your prep work first, but, then, you can just toss everything in the slow cooker and let it go. Makes a lot so perfect for family gatherings or pot lucks, or, they can be canned or even frozen once done.
Ingredients:
1lb dry navy beans(or other dried white bean of your choice), rinsed, soaked and simmered anddrained, per package directions
1 large onion, finely diced
1/2lb bacon, uncooked, and diced
1 can tomato sauce(about 14 oz or so)
1/2 cup ketchup
1 cup water(add more toward end of cooking if needed)
1/2 cup molasses
2t red wine vinegar
1/2 cup brown sugar
1t dry mustard
1-3t cayenne pepper(to taste..we like a bit of a kick to 'em
salt and pepper to taste, but start with a t, each, then add to taste, cus they're beans...they need salt
Directions:
1. In skillet, cook diced bacon and onion until onion is tender and bacon is cooked, but not crisp.
2. Meanwhile, add remaining ingredients other than mustard, salt and peppers, to slow cooker that's been sprayed with no stick spray.
3. Add bacon and onion and stir to combine ingredients.
4. Cook on low about 8 hours, seasoning with remaining seasonings about half way through cooking time, then taste every couple hours, if possible, and continue to season, as needed.
