This is a really cheap and easy pink sauce recipe. Great for when you only have a little time to make dinner and limited ingredients on hand. The recipe takes just long enough for you to be able to make a pot of pasta at the same time. You can find more recipes like it at my blog: .
Ingredients:
2 tablespoons olive oil (or other oil you like)
1 large onion, diced
2 garlic cloves
1 large bell pepper, diced
4 medium tomatoes, diced
1 tablespoon cream
1 teaspoon catsup (one packet from a fast food restaurant)
salt
Directions:
1. Heat oil in a medium pan and saute onion, garlic, and bell pepper until the onion starts to turn translucent.
2. Add tomatoes and about 1/4 cup of water (just enough to coat the bottom of the pan so the tomatoes don't dry up), cover, and let cook until the tomatoes fall apart, about 5-10 minutes.
3. Stir everything so the mixture actually looks like tomato sauce. Boil off any excess liquid.
4. Turn off heat and stir in cream, catsup, and salt. Add more cream if needed to achieve desired flavor and color.
