This is a layered pasta salad that I have served in the past for family parties. It is ideal for big gatherings or as a side dish in the summer time. It is quite easy and ideal for anyone with a busy schedule.
Ingredients:
1 1/2 cups medium size macaroni shells, freshly cooked
1 tablespoon vegetable oil
dressing
1 cup mayonnaise
1/2 cup sour cream
2 teaspoons dijon mustard
1/4 cup sliced green onions
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
2 cups shredded iceberg lettuce
3 hard cooked eggs, sliced
pepper to taste
1 ounces of ham, cut in thin slices
or 1 cup each of thin strips ham
and hard salami
10 ounces frozen tiny green peas, thawed
1 cup coarsely shredded monterey jack cheese
for garnish: 2 tablespoons chopped parsley
Directions:
1. Rinse the cooked macaroni shells
2. Drain the cooked macaroni.
3. Toss macaroni with oil to prevent shells from sticking.
4. Mix all dressing ingredients in a small bowl until thoroughly blended.
5. Put lettuce in one layer in a 3 quart bowl.
6. Clear glass or plastic bowl is best to show off the layered effect.
7. Top with cooled macaroni.

9. Sprinkled with pepper.
10. Add in layers the ham, peas, and cheese.
