Make-Ahead Mexican Lunchbox Pinwheels

This is from the book The Healthy Lunchbox which I just checked out from the library. It looks like it would be delicious as an appetizer or easy make-ahead lunch. Cooking time=Chilling time
Ingredients:
2 tablespoons fat-free vegetarian refried beans
10 inches flour tortillas
2 tablespoons diced tomatoes
2 tablespoons corn, cooked, drained and cooled
1 tablespoon sharp cheddar cheese
1/2 tablespoon cilantro, finely chopped
2 tablespoons avocados, mashed
1 tablespoon low-fat sour cream
2 tablespoons salsa
Directions:
1. Spread the refried beans on the tortilla.
2. Sprinkle tomato, corn, cheese and cilantro onto refried beans.
3. Mix avocado, sour cream and salsa. Spread on top.
4. Roll up, chill for at least 2 hours. Slice into 1-inch pinwheels.
