Make Ahead Meatball Salad

A make ahead salad for a quick and easy dinner when it is too hot to cook.
Ingredients:
1 lb ground beef
1/2 cup breadcrumbs, seasoned
1/2 cup italian salad dressing
6 cups salad greens
1 medium red onion, thinly sliced
1 cup mozzarella cheese, shredded
2 1/4 ounces sliced ripe olives
caesar salad dressing
Directions:
1. In a bowl combine beef and breadcrumbs. Shape into 3/4-inch balls.
2. Place in a greased 8-inch square baking pan.
3. Bake at 350F for 15 to 20 minutes or until meat is no longer pink.
4. Cool for 15-30 minutes.
5. Place Italian salad dressing in a resealable plastic bag; add meatballs.
6. Seal and refrigerate overnight.
7. Drain and discard marinade.
8. On a serving platter arrange greens, onion, cheese and olives.
9. Top with meatballs.
10. Drizzle with dressing.
