DELICIOUS INDIVIDUAL MOIST MUFFINS/BREAD MADE WITH WHOLE CORN AND MAIZE MEAL - A REAL STAPLE AT SOUTH AFRICAN BBQ'S - WISH IT WAS MY RECIPE BUT ITS NOT BUT A DEFINITE FAVOURITE :)
Ingredients:
125 ml maize meal
300 g self-raising flour
3ml salt
500 ml buttermilk
125 ml light olive oil
250 ml cheddar cheese, grated
410 (1 can) whole corn kernels or fresh cooked corn kernels if you prefer
tomato soup (for one serving) i use cup-a-soup
powdered biltong (jerky) as much as you like i use approx 150 ml
Directions:
1. PREHEAT OVEN TO 180C
2. GREASE A LARGE MUFFIN PAN WITH 12 HOLLOWS
3. MIX ALL INGREDIENTS TOGETHER TO FORM ATHICK BATTER
4. SPOON BATTER INTO PREPARED TIN AND BAKE FOR 25-30MINUTES UNTIL GOLDEN AND A TOOTHPICK INSERTED COMES OUT CLEAN
5. HEAT SOUP ACCORDING TO PACKET INSTRUCTIONS AND SERVE
6. SPRINKLE BILTONG OVER SOUP
