This is an old favorite of my family's. It is a wonderful tasting and easy to make holiday treat. Great for gift giving! Ingredients:
1 stick of softened magarine |
3/4 cup of hot mashed potato |
1/2 tsp. salt |
1-8 oz. package of coconut |
2 lbs. powdered sugar |
1 tsp. vanilla |
1 large package of chocolate chips |
2 tbs. shortening |
Directions:
1. Mix first 6 ingedients well. (mixes well with electric mixer)
2. Pat into buttered 9x13 pan or cookie sheet
3. Chill over night
4. Cut into small squares
5. Melt chips and shortening together over hot water
6. Dip squares of coconut mixture into the chocolate mixture
7. Place on waxed paper to harden. Store in frig or freeze.
