These alomnd tarts were first baked at the court of Henry VIII and named for the queen's ladies-in-waiting. They are very sweet; you may want to serve them with a dollop of unsweetened whipped cream. This recipe is from 500 Treasured Country Recipes.
Ingredients:
1 9 piecrust - unbaked
1/2 cup ground almonds
1/2 cup sugar
2 egg yolks
1 teas. lemon zest
1 tbsp. flour
2 tbsp. heavy cream
Directions:
1. Preheat oven to 350 degrees.
2. Butter 8 of the cups of a muffin pan. Sprinkle them with flour; shake off excess.
3. Roll out piecrust and cut out 8 circles 1 wider than the muffin cups. Press the dough circles into the muffin cups. Make sure to cover the bottoms and partway up the sides.
4. Beat together the ground almonds, sugar, egg yolks, zest and flour. Slowly add the cream; beat until mixture is smooth.
5. Add about 1 tablespoon of the filling to each muffin cup (it should not reach the top). Bake 15 to 20 minutes, until the filling is golden brown. Be careful, not to overbake or they turn too brown.
