Peter Minakis was inspiration for this recipe. Visit his blog; it will amaze you. This looks to be a spicy sausage. I would go low on the seasonings and build up; you can always add; you can't take away.
Ingredients:
10 lbs ground pork
2 1/2 lbs leeks, cleaned, chopped, green part too
1/8 cup red pepper
1/8 cup black pepper
1 teaspoon ground cumin
1/16 cup dried oregano
1/8 cup garlic powder
1/8 cup paprika
Directions:
1. Mix ground pork, leeks, red pepper, black pepper, cumin, oregano, garlic powder, and paprika together.
2. Stuff in casings.
