I let my husband name this dish. Of all the things I cook he says this is one of his favorites. I certainly don't mind making it because it's so good and so easy. I guess I can stop trying to be gourmet if this is what he really wants to eat. :-) This is good comfort food and is easy for a quick weeknight meal. The quantities listed below are approximate since I just eyeball most of the stuff. If I don't have the family size box of mac and cheese on hand I just use 2 regular boxes. I also like to use the frozen veggies that you can microwave right in the bag.
Ingredients:
1 (14 1/2 ounce) box kraft macaroni and cheese (family size)
1/2 medium onion, chopped
2 stalks celery, chopped
10 tablespoons butter
1/2 cup milk
1 garlic clove, chopped
1 tablespoon grill seasoning
1 lb turkey kielbasa
1 (12 ounce) bag frozen broccoli carrots cauliflower mix
1 cup shredded cheddar cheese
1/2 cup breadcrumbs
Directions:
1. Prepare mac and cheese as directed on box, adding additional shredded cheese along with packaged cheese mix.
2. Steam veggies in microwave.
3. Saute onions, garlic, celery, keilbasa, and grill seasoning until onions and celery are tender.
4. Combine all ingredients in greased 13x9 baking dish.
5. Melt 2 Tbsp butter and combine with bread crumbs.
6. Top casserole with buttered bread crumbs.
7. Bake at 425 for 15 minutes or until bread crumbs begin to brown.
