Macaroni and White Cheese

Definitely not macaroni and white cheese out of a box...
Ingredients:
1 lb rotini pasta
1 cup chopped onion
1 tablespoon butter
1 cup sliced mushrooms
3 cloves minced garlic
1 cup grated extra old white cheddar cheese (or more)
1 cup grated gouda cheese (or more)
1 cup grated gruyere (or more)
1 cup grated asiago cheese (or more)
2 cups cream, hot
2 tablespoons dijon mustard
1/2 cup grated romano cheese
Directions:
1. Saute together the onion, butter and mushrooms until browned.
2. Add the minced garlic, saute for one minute and set aside.
3. Cook and drain the pasta, and leave it in the pot.
4. Add to pasta the hot cream and the dijon mustard.
5. Stir well.
6. Add the cheddar, gouda, gruyere, asiago and the mushroom mixture to the pasta.
7. Stir well.
8. Turn mixture into a well buttered baking dish (approx. 3 qt.).
9. Top with romano (or with a mixture of the other cheeses).
10. Bake at 400F for 25 minutes or until hot.
