Macaroni and Cheese With Cauliflower

You barely can taste the cauliflower, just an addition to make it a little healthier choice.
Ingredients:
2 cups cauliflower, chopped very, very finely
2 cups uncooked macaroni
2 tablespoons butter
2 tablespoons flour
1 1/2 cups milk
6 ounces american cheese
6 ounces cheddar cheese, shredded
Directions:
1. Cook macaroni in water about 10 minutes, or until tender but still firm. While the macaroni is cooking, place cauliflower in microwave safe bowl with 2 T water. Cover bowl and microwave 2 to 4 minutes to steam cook the cauliflower. Microwaves very, so check often. Once macaroni is done, drain water and return to pan.
2. Mix in the cooked cauliflower.
3. In a saucepan, melt butter, whisk in the flour and mix well. Slowly whisk in the milk until completely incorporated. Cook until slightly thickened and bubbly. Add cheese, stirring until melted and smooth.
4. Pour over the macaroni mixture. Heat for two minutes, stirring constantly. Serve.
