Macaroni And Cheese With Broccoli |

Ingredients:
4 ounces elbow macaroni, uncooked (1 cup uncooked pasta) |
2 cups fresh broccoli flowerets |
1 cup (4 ounces) finely shredded reduced-fat sharp cheddar cheese |
1/2 cup 1% low-fat cottage cheese |
1/3 cup low-fat sour cream |
1/4 cup fat-free milk |
1 large egg, lightly beaten |
1/4 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Cook macaroni in a Dutch oven according to package directions, omitting salt and fat. Add broccoli during last 2 minutes of cooking time; drain well. 2. Add Cheddar cheese and remaining 6 ingredients to Dutch oven; stir in macaroni mixture. Cook over medium heat, stirring constantly, 6 minutes or until bubbly. |
