Mac N Goat Cheese

This recipe calls for it to be served warm, which sounds great! But I think it could be equally delish served cold or room temp as a pasta sald type dish. From rachael ray mag 3/09.
Ingredients:
3/4 lb macaroni
1/4 cup extra virgin olive oil
2 garlic cloves, chopped
1 pint cherry tomatoes, halved
1 (9 ounce) bag spinach
salt & pepper
6 ounces goat cheese, broken into chunks
3/4 cup walnuts, toasted
Directions:
1. Cook pasta al dente and reserve 1/4 cup cooking water.
2. heat oil over med heat. Add garlic and cook until golden. Stir in tomatoes, spinach and reserved pasta water and cook until heated through. Season w/salt & pepper. Stir into the pasta along w/the goat cheese. Transfer to a serving dish and sprinkle with walnuts.
