A slow cooked Chicken and Onion soup. Note: Depending on which chicken stock you use the sodium content will vary. The liquid chicken stock I use has 500mg less sodium, some have more. Check the nutritional values of the chicken stock you buy.
Ingredients:
250 ml water
300 ml chicken stock
5 g canola oil
1 medium white onion, diced
1 small red onion, diced
3 tbsp shallots, chopped
10 g spinach, chopped
165 g chicken, diced
Directions:
1. Add 250 ml of liquid chicken stock and 150ml of water to your slow cooker.
2. Chop 10g of spinach and add to slow cooker.
3. Dice 165g of chicken and add to slow cooker.
4. Set your slow cooker to high or automatic.
5. Dice 1 medium white onion, 1 small red onion and chop enough shallots for 3 tbsp.
6. Heat a fry pan and add 5g of canola oil.
7. Add the diced onions and shallots to the fry pan.
8. Cook until the onion begins to turn golden. Will require regular stirring.
9. Add 100ml of water and 100 ml of chicken stock to the fry pan and turn heat down. Simmer for around 10 minutes, stirring regularly.
10. Add the contents of the fry pan to the slow cooker.
11. Cook for 2 hours or more.
