Luscious Lemon Fruit Dip

Rich, creamy fruit dip. Perfect to serve at showers and lucheons. I have not tried this recipe, but I'm posting it for safe keeping. I plan to use Splenda for the sugar.
Ingredients:
2 cups sugar
2/3 cup cornstarch
1 cup cold water
4 eggs, beaten
2/3 cup lemon juice
2 teaspoons vanilla extract
2 cups heavy whipping cream, whipped
fresh fruit
Directions:
1. In a large heavy saucepan, combine the sugar and cornstarch. Gradually whisk in water until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat.
2. Stir a small amount of hot mixture into eggs; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. Gently stir in lemon juice and vanilla.
3. Transfer to a bowl. Cool to room temperature without stirring. Cover surface of mixture with waxed paper; refrigerate until cooled. Fold in whipped cream. Serve with fresh fruit.
