Luscious Banana Layer Cake

Ingredients:
2 cups cake flour sifted
1 teaspoon baking powder
1 teaspoon soda
1/2 teaspoon salt
1/2 cup butter
1-1/2 cups granulated sugar
1 egg plus 1 yolk well beaten
1 cup banana mashed
3/4 cup milk sour
1 teaspoon vanilla
lemon filling
1 cup granulated sugar
5 tablespoons cake flour
1/8 teaspoon salt
1 egg
2 egg yolks slightly beaten
2/3 cup water
1/3 cup lemon juice
1 teaspoon lemon rind
2 teaspoons butter
orange lemon frosting
2 teaspoons grated orange rind
1/2 teaspoon granted lemon rind
3 tablespoons butter
2 egg whites unbeaten
1/8 teaspoon salt
4 cups sifted powdered sugar
1 teaspoon orange juice
1 teaspoon lemon juice
orange food coloring
Directions:
1. Sift flour once then measure and add baking powder, soda and salt and sift together three times.
2. Cream butter thoroughly then add sugar gradually and cream together until light and fluffy.
3. Add eggs and beat well then add bananas and beat again.
4. Add flour to creamed mixture alternately with milk a small amount at a time.
5. Beat well after each addition until smooth then add vanilla.
6. Bake in two greased square pans at 375 for 25 minutes.
7. Spread lemon filling between layers and frosting on top and sides of cake.
8. To make filling combine sugar, flour and salt in top of double boiler.
9. Add egg, water and lemon juice mixing thoroughly.
10. Place over boiling water and cook 10 minutes stirring constantly.
11. Add rind and butter then cool.
12. To make frosting add orange and lemon rinds to butter and cream well.
13. Add egg whites and salt and blend.
14. Add sugar alternately with fruit juices beating until smooth and right consistency to spread.
15. Add coloring.
