This is a quick and easy lunch or dinner that is low in carbs. Fancy enough to serve to girlfriends; tasty enough for the fam!
Ingredients:
4 boneless skinless chicken breasts
1 avocado
1 large tomato
1 (3 ounce) package slivered almonds
mayonnaise
1 lemon
butter
Directions:
1. Brown chicken breasts in butter; cook completely. Remove and drain on paper towels. To assemble, layer breast, slice of avocado and tomato. Squeeze lemon juice to taste into mayonnaise; put dollop onto each chicken breast. Brown almonds in remaining butter; top chicken. Easy and very gourmet!
