Lumpia With Spicy Sweet And Sour Sauce

This was a recipe that my step mother gave me years ago.
Ingredients:
lumpia
1 lb ground beef or pork
1 lb shredded cabbage
1/2 lb shredded carrots
1/2 lb shredded celery
2 cloves garlic crushed
1 whole onion, chopped
1/2 c soy sauce
1 package of spring roll wrappers (contains about 35 wrappers)
sm bowl of water
peanut oil for frying
dipping sauce
1/4 c. cider vinegar
1 t. soy sauce
1/2 c. sugar
1 c pineapple juice
1/2 t ginger root -- finely grated
1/2 garlic clove; -- crushed
2 t cornstarch; -- blended with
2 t cold water
salt
Directions:
1. Lumpia:
2. Combine first 7 ingredients in a large mixing bowl.
3. mix well.
4. Separate the spring roll wrappers.
5. With one corner of wrapper facing you, place about 2 T. of meat mixture into the corner and roll half way up.
6. When you get to the middle with the next corners to the left and right,
7. fold over the roll first the left corner then the right corner.
8. Continue to roll till you get to the last corner.
9. Dip your fingers in the small bowl of water and rub the last corner to seal and finish rolling.
10. Deep fry in peanut oil until meat is cooked and the wrapper is a golden brown.
11. Drain on layers of paper towels.
12. Serve with sweet and sour sauce.
13. Dipping Sauce:
14. Combine all ingredients; serve with hot lumpia.
15. Makes about 1/4 cup.
