This is my own version of the Filipino classic, Lumpia. I have experimented with a few different recipes until I came up with one that is absolutely delicious. This makes 30 lumpia rolls and can be served as an appetizer for many people, or as a main dish for less. Read more . Enjoy! =)
Ingredients:
1/2 lb. ground beef
1/2 lb. ground pork
1 small sweet onion, finely chopped
3 carrots, shredded
2 eggs
3 t. soy sauce
1 tsp. sesame oil
1 tsp. hot sauce (such as sriracha)
1/3 cup chopped cilantro
2 t. all purpose flour
1 t. garlic powder
salt & pepper
lumpia wrappers, thawed
1 cup vegetable oil for frying
Directions:
1. Put all ingredients except for the lumpia wrappers and vegetable oil in a large bowl and mix together, like you would a meatloaf. Make sure ingredients are well incorporated-using your hands helps with this.
2. Roll lumpia according to package directions. (Spread a small amount of filling [about 1-2 tsp.] along the end of the lumpia wrapper. Fold bottom of wrapper up over the filling, and then fold in the sides. Tightly roll the lumpia up the rest of the way like you would a tiny burrito, keeping the roll very tight.) Have a small cup of water handy while you're rolling to dip your fingers in and seal the lumpia closed.
3. Heat 1/2 inch of vegetable oil in a large frying pan or heavy skillet over medium heat. Fry lumpia 4 or 5 at a time for about 5 minutes or until golden brown and crispy on all sides. Drain on paper towels. Serve immediately. (Serve with sweet chili sauce for dipping)
