Ingredients:
5 eggs yolks
5 egg whites
1/4 cup(s) sugar
2 teaspoon(s) vanilla extract
1/2 cup(s) heavy whipping cream
9 ounce(s) dark chocolate ' 1 bar broken into pieces
1 1/2 ounce(s) butter
1 pinch(s) salt
Directions:
1. In a double boiler melt butter and chocolate but keep cool - (if hot you will cook the eggs)
2. whip egg yolks and 1/8 cup sugar until maximum volume (~3 minutes)
3. Transfer egg yolks to a large bowl
4. whip egg whites and 1/8 cup sugar until maximum volume (~3 minutes)
5. mix egg yolks and chocolate until incorporated
6. add whipped egg whites - fold gently to incorporate
7. whip heavy cream and vanilla until stiff
8. Gently fold whip cream into chocolate / egg mixture
9. Refrigerate for several hours (may want to dish out before cooling down)
