My son-in-law's grandmother made this cake for Father's Day and my daughter brought me a oiece. It was the best cake I have ever ate. I just HAD to have the recipe. I didn't know the grandmother so I didn't want to call her. Read more . I asked a few of you that I have talked with quite a bit if you had any idea what it may be. Well I finally got up the nerve to call and ask her for the recipe. Two of you came almost identical too it. This is the BEST cake I have ever had. Thank you Mrs. Bolton!!!! Ingredients:
1 box white cake mix |
1-3 oz. box strawberry flavor jello |
1 c. veg. oil |
1/2 c. water |
4 eggs |
1 3/4 c. frozen strawberries, thawed and mashed |
1 c. coconut |
1 c. chopped pecans |
10 fresh strawberries |
cool whip |
Directions:
1. Preheat oven to 350°F 2. Mix first 5 ingredients well. 3. Add the mashed strawberries, mix well again. 4. Add coconut and pecans and mix well again. 5. Pour evenly into 3-9 inch pans that have been sprayed with cooking spray and then put in a sheet of wax paper that has been cut to fit the bottom of the pan. 6. Bake for 30 mins then reduce heat to 325°F and cook for 5 minutes more. 7. Lightly touch center of cake and if it springs back it is done. 8. Set pans on a wire rack to cool. 9. When cool frost with the Lucious Strawberry Coconut Pecan Frosting between the layers and on the sides. Top with sliced fresh strawberries and cool whip. |
