This is my personal take on a delicious recipe I found called Kashabowie Walleye . Tender, moist walleye fish steam cooked on the grill or in the broiler. Falls apart with a fork almost instantly. Low maintenance preparation and quick cook time. serves 4-8 (depending on how hearty the appetites.)
Ingredients:
walleye fish 2 to 3 lbs fillets
1 (16 ounce) can pineapple rings
1 (8 ounce) jar maraschino cherries
4 tablespoons butter
3 sheets aluminum foil
salt & pepper
3 tablespoons lemons, and or 3 tablespoons lime juice
Directions:
1. Place two sheets of aluminum foil on top of one another.
2. Arrange fillets on foil allowing a 2 inch edge all around.
3. Drizzle butter over fillets. (salt, pepper & citrus juices if used).
4. Place a pineapple ring on top of each fillet.
5. Put one Maraschino cherry inside each pineapple ring.
6. Use third sheet of aluminum foil on top crimping edges to make an air tight seal. (Top sheet of foil will expand, looking a little like jiffy pop, and steam cook fish).
7. Cook on barbecue for 20-25 minutes Note: When using a gas grill at medium high heat time varies but takes about 10 minutes less than charcoal grill.
8. For Oven: Place on a cookie sheet and broil in oven for 20-30min.
9. Eat alone or serve over rice or pasta if desired with veggie sides.
