Uses applesauce, no oil.
Ingredients:
3 c flour
1 t baking powder
1/2 t baking soda
1 1/2 t salt
2 t cinnamon
1 t nutmeg
1/2 t cloves
1/2 c skim milk
2 t egg whites, whipped
1/2 c applesauce
1 c sugar
2 c zucchini, grated
Directions:
1. Preheat oven at 350. Prepare pan(s) with cooking spray and flour. In a mixing b owl, combine flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. In anoth er mixing bowl, combine milk, egg whites, applesauce, sugar, and zucchini. Add wet ingredients to dry ingredients just until moistened. Pour batter into prepared pan(s). Bake for 50 to 60 minutes depending on pan size.
