Great way to use up over ripe bananas. Great as a snack or for breakfast. Saltfree! Calories are reduced by the use of eggwhites, and PAM Spray instead of frying as per original recipe. Makes 10 fritters.
Ingredients:
1 ripe banana
1 tbsp brown sugar
1 egg white
1/2 tsp vanilla
1/2 tsp nutmeg
1 tsp baking powder
1 tbsp wholewheat flour
Directions:
1. Crush ripe banana and then add sugar.
2. In a seperate bowl beat egg white and then add to banana/sugar mixture.
3. Add vanilla and nutmeg and whip mixture using a wire whisk.
4. Sift flour and baking powder and add to mixture.
5. Heat a nonstick frying pan over medium heat. When pan is hot spray with PAM spray to lightly coat the bottom of the pan.
6. Drop mixture by the Tablespoon (measuring spoon) full. When edges turn brown and fritter bubbles in the middle, flip to cook other side.
7. Remove fritter from pan and drain on paper towels.
