These are a nice chewy brownie with great chocolate flavor and not as much fat as a traditional brownie. The icing, however, is not low fat so I suppose you could omit that if desired but I really think it just makes the brownie even better!
Ingredients:
1/2 cup unsweetened applesauce
2 cups sugar
2 whole eggs
2 egg whites
1 cup whole wheat flour
1/2 cup unsweetened cocoa powder, plus
2 tablespoons unsweetened cocoa powder
1/2 teaspoon salt
1 teaspoon vanilla extract
1/4 cup butter, softened
2 1/2 cups powdered sugar
2 tablespoons unsweetened cocoa powder
1/4 cup black coffee
1/4 teaspoon ground cinnamon
Directions:
1. Mix applesauce, sugar, whole eggs, egg whites and vanilla in a large bowl. In a seperate bowl mix togeather whole wheat flour, cocoa powder and salt. Add the flour mixture to the applesauce mixture and stir well to combine. Pour into a greased 13 x 9 pan. Bake at 325 degrees for 27-37 minutes or until the middle is set. Let cool.
2. For the frosting- combine all ingredients in a medium size bowl and beat with an electric mixer until light and fluffy. Spread on cooled brownies.
