Lower Carb Pancakes for One

I thought it sounded weird but they're actually really good. A little chewy but with sugar free maple syrup it's a high fiber/high protein breakfast.
Ingredients:
1/2 cup oats
1/2 cup fat-free cottage cheese
2 tablespoons wheat germ
2 eggs (you can use egg beaters)
cinnamon
vanilla
Directions:
1. Combine all ingredients in a blender and blend until consistency of pancake batter.
2. Pour into hot skillet and cook both sides.
3. Makes about 3 small pancakes.
